This is a bit of a departure from tradition, but with flavors that ring true for the holiday. Thanksgiving guacamole (“mockamole”) is a healthy crowd pleaser that is easy to prepare and trust me…you will not have any leftovers.
4 avocados, pitted and removed from skin
Juice of one lemon
1/8 C. onion, chopped fine
Leaves from 3 sprigs of thyme, minced (about 1/2 t.)
2 mint leaves, finely chopped
2 T. parsley, finely chopped
Salt
In a small bowl, smash avocados. Add in next 5 ingredients and combine. Season generously with salt. Serve with chips, apple slices, sweet potato fries – really just about anything.
