A twist of traditional pesto with cilantro and Thai basil, but just as easy and delicious!.

1 C. cilantro leaves

1/2 C. thai basil leaves

1 hot thai pepper, seeded

1 large clove of garlic

1/2 C. olive oil


In a food processor, combine first four ingredients until finely minced.  Add oil slowly until incorporated.  Taste and season with salt.

Combine with pasta, add to chicken, put on a sandwich with fresh mozzarella ….the options are limitless.

I like to add about 1/8 C. chopped peanuts on top of prepared pasta to add texture and protein, but that’s optional, especially if you are nut-free.  You can also use rice noodles for gluten-free.  Enjoy!
