Shrimp Caesar Salad with yogurt dressing. Come and get it! Think dressing out of the bottle is the way to go? Then you need to give this simple homemade dressing a try. It’s made with yogurt keeping it healthy and light.


1/4 C. Greek yogurt (such as Greek Gods)

Zest of half lemon

Juice of half a lemon

1 clove of garlic, peeled, minced and smashed almost to a paste

1 T. Parmesan cheese

1/4 t. Grainy or Dijon mustard

A splash of Worcestershire sauce (About 1/8 t.)

A splash of Thai fish sauce (About 1/8 t.) such as Thai Kitchen

Salt and pepper

Two heads of romaine lettuce, washed, dried, and cut into small pieces

Croutons or Pro-Chi Lentil Crunch Simply Salted

About 12 cooked shrimp (see recipe here)

In a small bowl, combine yogurt and next seven ingredients  Season with salt and pepper, and taste.


Transfer to large salad bowl and add romaine. Toss to combine. Add shrimp and croutons and you have an amazing Shrimp Ceasar Salad with Yogurt Dressing to enjoy!

Making Your Own Dressing

If you prefer, you can use store bought Ceasar dressing, however because it’s so easy to make this recipe, I encourage you to give it a try.  Making the dressing yourself gives you greater control over your nutrition.  The yogurt base of the dressing has gut-healthy probiotics that add to its nutritional benefits, and using a low-fat or non-fat yogurt makes it a lighter option.  

Stretching the Protein

This is a great recipe to make with leftover shrimp with because it’s made mostly greens so you don’t need a lot of protein.  Plus, if you use Pro-Chi instead of croutons, you have two sources of protein and can use less shrimp, as well.
