Take your leftover cauliflower steaks with caramelized onions and transform them into a quick and easy rice bowl. You can add or sub in turkey, butternut squash, Brussels – whatever you’ve got!
Layer rice with chopped leftover cauliflower, turkey, or other veggies. Top with avocado and tomato, and drizzle with apple cider vinaigrette.
Apple Cider Vinaigrette:
1 t. shallots, minced
1 t. grainy mustard
1 T. apple cider vinegar
1 T. apple cider
2 T. avocado oil
Salt
In a small bowl, combine shallots and next three ingredients. Slowly whisk in oil. Taste and season with salt.
