Celery is low calorie and high fiber, making it a great snack choice. I’ve enhanced it a bit here with prosciutto: )

Preheat oven to 400 degrees.

Clean and cut celery stalks into 2 1/2” pieces. Place on baking sheet and drizzle lightly with olive oil and sprinkle with salt and pepper. Cut prosciutto slices into thirds. Wrap a prosciutto slice around each piece of celery and place on the baking sheet so that the opening of the prosciutto is flush against the bottom of the pan to stay closed. (Optional, stuff the center of each celery stalk with blue cheese and then wrap so that the cheese is face up and the opening of the prosciutto is flush against the pan. If you use cheese, you might also want to cover the pan with aluminum foil for easy clean up.) After you’ve wrapped each piece of celery, place the pan in the oven and bake for 10 minutes. The prosciutto will crisp and the celery should keep its crunchiness.

Remove from oven and serve.
