Peaches and cream pair with the fig as a delicious late summer dream ensemble. Sweet enough for kids to enjoy and expand beyond their usual lunches and delicious enough for adults.
Two Slices of Bread
1/4 C. Cream Cheese (Lemon Chive Cream Cheese recipe below)
One Peach or Nectarine, pitted and thinly sliced
One Fig, halved and sliced
Sea Salt, pinch
Cut bread into a shape, if desired using a cookie cutter. Toasting bread is optional. Slather one side of both pieces of bread with cream cheese. Place one slice of bread on a plate cream cheese side up. Add a layer of peach or nectarine slices (save any remaining slices of peach or nectarine for another use). Add a layer of figs. Sprinkle lightly with salt. Top with remaining slice of bread with the cream cheese side down. Slathering both pieces of bread with the cream cheese is important in holding the sandwich together in a lunch box.
Lemon Chive Cream Cheese (single serving):
1/4 C. Whipped Cream Cheese
1/8 t. Lemon Zest
1/2 t. Chives, finely chopped
Two Splashes of Hot Sauce
Combine all ingredients in a small bowl. Serve or store in refrigerator.
