Healthy homemade breakfast bars with lentil crunch are a great start to the morning. Rich with protein and nutrition and just six simple ingredients. This is an easy granola bar recipe with added nutrition and delicious crunch.

1 ¾ C. old fashioned oats

4 ounce package Pro-Chi Lentil Crunch Simply Salted

⅓ C. raisins 

1 C. unsweetened almond or peanut butter

2 T. coconut oil

⅓ C. maple syrup 

Preheat the oven to 350˚F. 

Combine the oats, lentils, and raisins in a medium bowl and set aside

In a microwave safe bowl, combine almond/peanut butter, maple syrup, and coconut oil and heat for about 20 seconds to soften. Whisk everything together to create a homogenous mixture. 

Add the almond/peanut butter mixture to bowl with oats and fold together. It will be somewhat stiff. 

Transfer to a parchment paper lined 8×8-inch baking dish and using your hands or the bottom of a cup press the granola mixture into the dish in an even layer. Bake in the oven for about 15-18 minutes until set and lightly brown.

Cut into thirds length and width-wise.
