This is an easy green bean salad recipe for Thanksgiving dinner that elevates the sophistication of French’s Green Bean Casserole without adding work. Start by blanching the string beans, then toss them in the oven with a drizzle of olive oil, blue cheese and honey and let it all melt together, then top with Pro-Chi for crispy crunch.
1 lb. green beans, ends trimmed
1T. olive oil
Salt and Pepper
2 oz. blue cheese, crumbled (about 3-4 T.)
1 T. honey
Preheat oven to 425 degrees.
Bring salted water to a boil over high heat. Add green beans and cook for about 30-60 seconds until just slightly tender. Remove from water and cool in an ice bath to stop the cooking. You can do this a few days in advance and store in the refridgerator.
Place green beans on a baking sheet and drizzle with olive oil. Season with salt and pepper. Add blue cheese and honey and toss to combine. Place in hot oven for about 5-10 minutes until green beans are warm and cheese and honey have have melted into a creamy glaze.
Remove from oven. Place on serving platter and sprinkle with Pro-Chi Lentil Crunch.
