There’s no scrimping on the shrimp here, and except that there’s barely any work in making it.  This is a super easy and delicious shrimp recipe made with just a handful of basic ingredients. These shrimp are flavorful, healthy and versatile. Serve the shrimp hot or cold.  You can serve the shrimp on a platter, tossed in a salad such as in our Shrimp Ceasar Salad with Yogurt Dressing, in a rice bowl, or in tacos. They are so good and the options are endless!

Here’s How to Make Them:

1 lb. cleaned shrimp, peeled and deveined

2 T. olive oil

Zest of one lime

1/4 t. garlic powder

1/4 t. onion powder

1/8 t. paprika

Salt and pepper (generously)

1 T. fresh parsley, chopped

2 radishes, slices thin (optional)

In a medium bowl, combine shrimp, 1 T. olive oil, zest, garlic powder, onion powder, and paprika. Cover with plastic wrap for 30-60 minutes to marinate. Remove from fridge.

Working in batches, heat 1 t. of remaining olive oil in a large skillet over high heat. Add a third of shrimp to the pan without overlapping them. Let cook for 1 minute, flip and let cook for 45-60 seconds on the other side.  Remove from the pan and set aside (preferably on a rack). Then add another 1 t. of the remaining oil and another third of shrimp to pan and cook for 1-2 minutes as done previously.  Repeat directions with remaining third of shrimp.

Use A Hot Pan:

The key is to have a very hot pan so that the shrimp sear without overcooking them. When you do this, you’ll get nice color on the shrimp and it will cook quickly without being overcooked.

Place shrimp in a serving platter, sprinkle with parsley and radishes. Eat warm or refrigerate and serve cold. I love this shrimp as is and tossed with a Caesar salad

Serves about 4.

More Options:

You can also cook the shrimp inside as described above or you use this same recipe and cook the shrimp outside on a hot grill if you prefer, which is a perfect summer option. If you use a grill, you should use the 2 T. of oil to marinate the shrimp instead of 1 T. and you can skip using any additional oil when cooking, but just be sure to spray your grill to prevent sticking.

If you want to stretch your budget, you can serve the shrimp with lots of grilled or roasted vegetables or with sides like rice and quinoa to make this an inexpensive meal.  You don’t need a lot of shrimp per person especially when you pair the shrimp with other plant-heavy foods.
