This salad is delicious and especially perfect now because it uses long-lasting fridge and pantry staples. To make it, slice cabbage thinly and toss with thinly sliced red onions, a dollop of yogurt and a drizzle of balsamic dressing. Then top with sliced artichoke hearts, olives, and Pro-Chi. Season with salt and pepper to taste and enjoy! Super delicious, easy and healthy.
