This easy healthy fall recipe is a quick and easy dish that delciiously blends sweet and savory notes. The kale with lightly sauteed garlic and combined with glazed brown sugar apples. it is an easy 10 minute recipe thatyou will love. I like to use baby kale because it’s so tender, but any type of kale will do. If you use bunches of kale just remember to take the ribs out and saute just the leafy greens.
2 t. olive oil
Two garlic cloves, chopped
One 16 oz. container of baby kale (about 4 C.)
Salt and pepper
1 T. butter (you can use vegan butter if you’d like)
Two ripe apples, cored and cut into 1/8″ slices
1 T. brown sugar
1/8 t. cinnamon
Heat a large saute pan with olive oil over medium high heat. Add garlic and let cook 30 seconds. Then add kale and cook just until lightly wilted about 60 seconds tossing continuously. Remove from heat and set aside. In the same pan, add butter and reduce heat to medium. When butter is belted, add brown sugar and stir to combine. Add apple slices and let cook for about 2-3 minutes until just tender. Sprinkle with connamon and taste. Combine apples with cooked kale and serve.

I like to think of this recipe as a warm kale salad. I like the greens to just be ever so slightly wilted so they still have some structure and the brown sugar apples create a juicy glaze that pairs well with seared chicken or pork tenderloin. To keep it vegetarian, it’s also delciious on top of a baked sweet potato.
You can also use arugula, spinach or dandelion greens as alternatives to the kale or to simply to mix it up.
