Chicken sausage is flavorful, inexpensive, easy, and a healthier alternative to other sausage options. This recipe is heavy on the veggies too, making it a better-for-you choice.
2 T. canola oil
1 yellow pepper, seeded and sliced
1 red pepper, seeded and sliced
1 small red onion, thinly sliced
2 small zucchini, quartered and sliced
4 uncooked chicken sausage links
One bottle of beer
Heat oven to 400 degrees.
Place peppers and onion on a sheet pan lined with parchment and drizzle with 1T. oil. Season with salt and toss to combine. Place in oven and cook about 10-12 minutes until slightly tender. Remove pan from oven, add zucchini and an additional teaspoon of oil and return to oven for an additional 10 minutes or until vegetables are tender. Season with additional salt, as needed
Meanwhile, heat a large skillet over medium heat. Add remaining oil and sausage and sear until brown on all sides. Carefully add beer to skillet to cover halfway up sausage. It will foam so add slowly. You may not need the whole bottle depending on size of pan. Bring to dinner and let cook until ssysagd is cooked through.
Remove sausage and let it rest for 5 minutes. Discard beer. Slice and combine with vegetables.
