An easy Brunswick Stew recipe using leftover Thanksgiving Turkey. Easy to make and no waste! You can do this in a pot on the stovetop or in a slow cooker. I like to use the slow cooker for mine.

2 – 3 C. leftover turkey, shredded

One 32 oz. container of chicken stock

One 15 oz. can fire roasted diced tomatoes (not drained)

One onion, coarsely chopped

One clove of garlic, chopped

1/2 C. barbeque sauce

1 T. brown sugar

1/2 C. frozen corn

1/2 C. frozen lima beans

Pinch cayenne

2 potatoes, peeled and diced OR cauliflower coarsely chopped

Salt and pepper, to taste

Parsley, finely chopped

Throw everything into a crock pot except for parsley. Turn on high setting for 4 hours. Taste and season with additional salt and pepper, as needed. Garnish with parsley. And then enjoy!
