Sauteed Bok Choy with Mediterranean Fried Rice is an easy plant-based recipe that is inexpensive to make and has immune boosting nutrition. Give it a try!

Before getting started just make sure to clean the bok choy well. Since this recipe uses chopped bok choy you can pull the leaves off and rinse each one under water similar to how you would wash romaine lettuce or other leafy greens.

Ingredients:

3 t. olive oil

2 garlic cloves

4 heads of baby bok choy, cleaned, removed from stem and chopped

Salt

1 egg, lightly beaten

2 C. cooked rice

1 sprig of thyme, remove from stem and chopped

1/4 C. Marcona almonds (use can also use roasted or blanched sliced almonds if you prefer)

1 T. balsamic glaze (storebought or you can make by reducing about 1/4 C. balsamic vinegar in a small saucepan over mediu, low heat until thick and syrupy reserving any extra for future use)

To Make the Recipe:

Heat 1 t. olive oil in a large skillet over high heat. Add half the garlic and left heat 15 seconds to sizzle. Add boy choy and sauté until lightly wilted about 90 seconds, tossing periodlically to cook all leaves. Lightly season with salt. Taste and remove from pan and set aside.

In the same pan, heat an additional 1 t. olive oil and egg. Add a small sprinkling of salt. Let it cook 5 seconds to paritially set and then lightly scramble with a spoon or spatula. Cook the egg until it is just cooked through but is not overcooked. Remove the egg from the pan, slice it, and set aside separately from the bok choy. Heat the last remaining 1 t. olive oil to the pan and the remaining garlic and thyme. Let cook 15 seconds to sizzle and add cooked rice. Toss lightly and let cook about 1-2 minutes until warm and slightly toasted. Add almonds, season with salt, and taste. Add cooked egg back to the pan and toss together.

Serve with bok choy and drizzle with balsamic glaze.
