Instead of making dinner more complex, make it interesting by adding more color. Purple sweet potatoes are both beautiful and nutritious (a blue zone food).

Preheat oven to 400 degrees. Peel and slice both yellow and purple sweet potatoes into thin strips. Keep potatoes in cool water while slicing until ready to cook to prevent oxidation. Drain and pat dry. Place on a baking sheet lined with parchment paper for easy cleaning. Drizzle lightly with oil to coat, add salt, and toss. Bake 15-20 minutes until tender, removing from oven once to turn. Turn oven to broil and let brown slightly. Taste and add additional salt if needed.
