Spring Fever

Spring has sprung. All you need is a bunch of red spring onions, about 1 C. of grape or cherry tomatoes, olive oil, salt and pepper.

Preheat oven to 400 degrees.

Trim the greens of the onions so that the onions are not more than around 10” in length. You can discard the tops or better yet – use them in a soup or sauce.  Slice the onions in half lengthwise.  Place the onions cut side down on a baking sheet and drizzle with olive oil moving the onions around a bit so they are well coated, and then sprinkle with salt and pepper. Bake for 5 minutes until slightly tender and beginning to brown. Remove from oven and add tomatoes. Season lightly with additional salt. Return to oven and bake 2 minutes until just beginning to blister.
