Keeping it healthy no matter how you define it. This dish is keto, paleo, whole30, and weight watchers friendly. Wow! Checking all boxes including delicious AND it’s easy to make.
I use rockfish but you can sub in any fish you prefer or even poultry.
Heat a sauté pan over medium heat and add a drizzle of olive oil.
Pat fish dry and season lightly with salt and pepper. Go easier on the salt than you normally might because the olive topping will balance it out.
Add fish to the pan skin side down and let crisp. Flip fish and sear till cooked through and golden. Total cooking time should be around 7 minutes or so.
Remove from heat and let rest.
Meanwhile, chop olives (about 1T. per piece of fish). Place olives over top of fish. Drizzle with a little olive oil and zest a bit of fresh orange over top. Serve and enjoy!
