Spicy Maple Sweet Potatoes

What would Thanksgiving be without sweet potatoes…looking for a new recipe?  We’ve got an easy and delicious one for you.

4 sweet potatoes, skin peeled and large diced into 1″ cubes

2 T. olive oil

Salt

Pinch cayenne

2 T. maple syrup

2 green onions, sliced (green parts only)

Preheat oven to 400 degrees.  Place potatoes on a sheet pan and add olive oil.  Toss to combine.  Season with salt and let cook about 20 minutes until just tender. Remove from oven and add cayenne.  Be careful not to add too much spice and taste it to make sure it’s to your liking.  Add maple syrup and toss to combine.  Place back in oven and cook for an additional 5-8 minutes until golden.  Taste and add additional salt if needed.  Add green onions and toss to combine.

Serves 8.
