These cauliflower steaks are healthy and satisfying and it’s good to fill up on veggies. If you prefer you can also make this with cauliflower florets rather than thick cauliflower steak slices. I like the sweetness of the golden raisins, but you can certainly omit them.
1 head cauliflower, sliced across into 1/4″ thick pieces
2 T. olive oil
2 T. butter
1 small onion, thinly sliced
1 T. apple cider vinegar
2 T. water
1/4 C. golden raisins
Preheat oven to 400 degrees. Coat bottom of a sheet pan with 1 T. olive oil, add cauliflower slices and drizzle remaining 1 T. olive oil over top. Sprinkle with salt and roast in oven for about 20 minutes until tender and lightly golden.
Meanwhile, in small skillet, melt butter over medium-low heat. Add onions and let caramelize slowly. When golden, add vinegar and let cook 1 minute. Add raisins and water and let stir. Let cook an additional minute until evaporated. Remove from heat. Taste and seasons with salt.
Top roasted cauliflower with onion mixture and serve.
