2 sticks butter
12-15 basil leaves
2 C. flour
3/4 t. baking powder
1/4 t. salt
1 C. sugar
1/2 t. vanilla extract
Preheat oven to 375.
In a small saucepan, melt butter over medium low heat. Add basil and continue to cook slowly until butter turns a honey brown, stirring gently. Be careful to cook slowly so butter does not burn. The butter should have a nutty aroma and be lightly brown. Remove from heat and let cool 15 minutes. Remove basil leaves.
Meanwhile in a small bowl, combine flour, baking powder and salt and set aside.
Place butter in a large bowl and beat on medium speed. Add sugar and continue to beat. Add egg and vanilla and beat until incorporated. Add flour mixture in slowly.
Wrap dough in plastic wrap rolling into log shape. Refrigerate dough for about one hour. Roll plastic covered dough lightly on a work surface to round if flattened. Unwrap and slice dough 1/4” thick. Place slices on ungreased baking sheet 2” apart. Reshape with hands as necessary so that the cookies are round.
Bake 8-10 minutes. Cool and enjoy.
