Leftover Magic: Cauliflower Hash

Transform leftover cauliflower into tomorrow’s meal. Roughly chop cooked cauliflower and set aside.  In a large skillet over medium heat, sauté onion in olive oil until caramelized.  Add cauliflower and toss together with spatula.  Let cook for about 3-4 minutes and taste. Season with salt and pepper as necessary. Top with cheddar cheese and let cook until melted.  Remove from heat and serve. Top with a fried egg and sliced avocado to make it a healthy, balanced meal.
