Pepita Butter and Banana Bread Sandwiches

Peanut butter and banana sandwiches get a makeover.  Nut-free and nutritious.

Pepita Butter and Banana Bread Sandwiches

2 Slices of Banana Bread, thinly sliced

2 T. Pepita Butter (recipe below)

4 Slices of Banana

Cinnamon for sprinkling (optional)

Gently slather one slice of banana bread with pepita butter. Top with banana slices and sprinkle with cinnamon. Top with second slice of bread.

Pepita Butter:

1 C. Raw Pumpkin Seeds, Shelled

1/4 t. Salt

1/4 t. Cinnamon

1 t. Honey

Put pumpkin seeds in medium skillet and gently toast over low heat. Do not burn. Put seeds in food processor and grind thoroughly. The seeds will go from whole to chopped to finely ground. Keep grinding until they become pasty. This takes a while so be patient. Once the mixture becomes a smooth paste, add salt, cinnamon and honey. Continue to process to incorporate. Store in a container in the refrigerator.
