Nut-Free Banana Bread

 

A delicious nut-free snack, rich with fiber and potassium, and kid-approved.

Nut-Free Banana Bread

1/2 C. Butter
1 C. Sugar
2 T. Molasses
4 Ripe Bananas
2 Eggs
1 1/2 C. Flour
1/2 t. Salt
1 t. Baking Soda
1/2 C. Coconut flakes (optional)

Preheat oven to 350 degrees. Cream together the butter and sugar in a large mixing bowl. Add molasses, and bananas and combine well. Add eggs one at a time. Separately combine flour, salt, and baking soda in a small bowl. Slowly incorporate flour mixture into wet ingredients without overmixing. Fold in 1/4 C. coconut (optional). Place mixture in greased loaf pan. Sprinkle top with remaining 1/4 C. of coconut (optional). Bake for 50 minutes until golden and cooked through.
