Cooking Cactus 

Have you ever looked curiously at cactus paddles at the grocery store and wondered how to prepare them?  These prickly green plants are exceptionally healthy to eat. To remove the spines, lay the cactus flat on a cutting board.  Place a clean towel in one hand to hold the pepper and your knife in the other hand to scrape the spines.  Remove the spines from all sides of the cactus, including the sides.  Coat the cactus with oil, season with salt and pepper, and grill 2-3 minutes on each side.  Chop the cooked cactus and toss it with roasted pepper, sliced grape tomatoes, sliced red onion, and seasoned with a drizzle of oil, lime juice and salt and pepper.  You can also add corn, black beans, and/or avocado for a delicious southwestern salad.
